Squid ink fideo noodles are short, fine noodles, used like rice in Spanish seafood dishes.
Fideo noodles are similar to vermicelli, also known as fideu and angel hair pasta. Made with squid ink, these black noodles provide a dramatic colour to soups and seafood stews.
Fideo noodles are used in traditional Spanish dishes – sopa de fideo, and the pasta-based version of paella called fideuà, typically made with king prawns, mussels and squid.
