The Rational iCombi Classic 10-1/1 Gas Combination Oven is a versatile and reliable cooking solution for commercial kitchens. This combi-steamer is designed in accordance with DIN 18866 to offer a variety of cooking methods, including the optional use of steam and convection, individually or together, making it suitable for most cooking applications.
The unit comes with a range of functional features to ensure optimal cooking results and energy efficiency. These features include ClimaPlus, which provides active climate management in the cooking chamber, constantly measuring and regulating humidity for effective dehumidification, high productivity, and low energy consumption. The humidity can be set in 10% increments and tracked on the digital display for accurate manual cooking.
The oven also boasts dynamic air turbulence in the cooking chamber, thanks to two reversing high-performance fan wheels with five programmable fan wheel speeds, resulting in optimal energy input and high uniformity with short cooking times. An effective steam generator ensures optimal steam performance even at temperatures below 100°C, while an integrated, maintenance-free grease separation system eliminates the need for an additional grease filter.
Other features of this oven include a cool-down function for fast cooling of the cooking chamber, core temperature measurement using a sensor and optional positioning aid, and Delta-T cooking for gentle preparation with minimal cooking losses. The digital display shows the cooking chamber humidity and time, display of target and actual values.
The oven is equipped with an ergonomic door handle with right/left opening and door closing functions, ensuring occupational and operational safety. It comes with an electronic safety temperature limiter for the steam generator and convection heating and an integrated fan wheel brake, tested according to national and international standards for unsupervised operation.
Cleaning and care is made easy with the non-mains pressure-dependent automatic cleaning and care system for the cooking cabinet and steam generator. The oven has an IP-protected USB interface for local data exchange, with an optional integrated IP-protected Ethernet interface and integrated WLAN interface (including Ethernet interface) for networking.
